It is now proven that altitude contributes to the quality of wines; Low atmospheric pressure provides more favorable conditions for the evolution of wine, as does the lower oxygenation rate and the humidity level which is around 13% at altitude (unlike 70% in the valleys, therefore less risk of disease).
